It seems like just a few weeks ago we were in a late winter chill but now the summer heat is bearing down on us. Chilled cantaloupe soup is a super easy summer soup to cool and refresh you and your kids while providing a lot of energy for your sunny days! Try this and discover how great it is!
Ingredients:
- 1 cantaloupe
- 2 cups orange juice
- 1 tbsp fresh lime juice
- 1/4 tsp ground cinnamon
Directions:
- Peel, seed, and cube the cantaloupe.
- Add cantaloupe and 1/2 cup oj to blender, cover and process until smooth.
- Transfer to large bowl. Stir in lime juice, cinnamon, and remaining oj.
- Cover, refrigerate an hour.
- Enjoy.
Serves 6 !
